Fresh Blackberry Lime Bar recipe. A refreshing and delicious taste of summerOur blackberry bushes have been producing in full swing these days. We have made plenty of jam, but for a fresh summer treat you must try this divine recipe for fresh blackberry & lime bars.

There is something about the goat cheese/shortbread/berry/lime combo that was so, so good. They are rich so cut them on the smallish side and share with your friends.

Ingredients
  • 1 c. butter, cut into chunks
  • ¼ c. brown sugar
  • ½ t. salt
  • 2 c. flour
  • ¾ c.
  • blackberry jam
  • 2 c. fresh blackberries
  • 4 oz. cream cheese
  • 4 oz. goat cheese (or cream cheese if you don't have goat cheese on hand)
  • ½ c. sugar
  • 1 T. flour
  • 1 egg + 1 egg yolk
  • zest of 1 lime
  • juice of 1 lime
  • ½ t. vanilla
Instructions
  1. In a large bowl beat the butter until soft, then add sugar and salt just until incorporated. Add flour and mix until it forms a dough. Press dough into a 13" x 9" pan lined with foil. Bake for 20 minutes @ 350 degrees. Cool for about 5 minutes.
  2. Spread jam over freshly baked shortbread and then sprinkle evenly with fresh blackberries. Set aside.
  3. Beat together cream cheese and goat cheese in a large bowl. When well mixed, add in sugar and 1 T. of flour until blended. Slowly add egg, egg yolk, lime zest, lime juice and vanilla, mix until smooth. Pour evenly over berries & shortbread. Bake @ 350 degrees for 25-30 minutes.
  4. Let cool for one hour on wire rack, then chill in the fridge for 2 hours. Pull the bars out of the pan with the help of the foil onto a cutting board. Cut into squares and peel off foil on bottom. Enjoy! (try not to eat too many all at once!)

    These bars look so good. But, yeah, they look familiar. I can’t remember where. Yummy. Enjoy those peacocks. They sound like a child screaming, though. So pretty/so noisy. 🙂

    Thank you for the Fresh Blackberry Bars recipe and thank you for publishing it, I too was annoyed when I knew I had to register in order to obtain the recipe, so I did not bother…
    Personally, peacocks are one of my favourite birds, however, here in the UK we believe peacock feathers in the house are bad luck, I don’t know why; perhaps it is something to do with the “Evil eye”. Anyway, I hope they bring you and your family nothing but good luck in your new home.

    Yum. It’s blackberry season here too and I just made enough jam (I hope) to get me through, so I’m surely going to be looking for more uses for them. These sound great.

    Oh these look delicious, my stomach is growling. I was just thinking about what to do with all the blackberries I’ve been picking lately — I think it will be blackberry/strawberry/raspberry jam. I’d make these bars if only I had goat cheese 🙂
